Ethylene Speeds Up Spoilage

Ethylene is a natural hormone that speeds up the ripening process. When fruits, vegetables and flowers ripen they release ethylene gas — and exposure to it makes the same produce deteriorate quickly. Research on bananas found that KMnO₄ ethylene absorption kept flavour for up to 15 days at 28 °C and extended shelf life up to 45 days at 13 °C.
